Slow Cooker Pork Tenderloin
This Pork Tenderloin is a simple and zesty dish to serve up for your family. Tender potatoes cook under the pork and it goes great with a salad on the side. Make it this week!
To begin, peel and cut 1 1/2 pound of red or Yukon gold potatoes into 2 inch pieces. Layer those in the bottom of your slow cooker.
Season your pork tenderloin with 1/2 teaspoon each of ground coriander, crushed fennel seed and freshly ground black pepper. Several of our local grocery stores have begun selling smoked and seasoned salts. I picked up this orange chipotle salt at one of them and added 1/2 teaspoon to this tenderloin as well. If you can’t find a good smoked salt in your area, use 1/4 tsp chipotle chili powder and 1/2 teaspoon sea salt.
Pour 1 cup of chicken broth in with the potatoes, then place your tenderloin over the top. Cover and cook on low for 5-6 hours.
And there you go! Supper is served.
