Spanish Rice Supper

Spanish Rice Supper is something my mom used to make when I was a kid. It’s a simple one-pot sort of dish, that can be altered to suit your family’s taste.  it uses “ordinary” ingredients, even picky eaters will love this! I hope you enjoy it! Spanish Rice Supper - Hip Homeschool Moms To begin, fry 4 slices of bacon in a large skillet until golden.

While the bacon is cooking, dice a bell pepper – I used half of a green and half of a red, along with a medium onion.

When the bacon is done, place it on a plate lined with paper towel. Sauté the onion and pepper in the bacon drippings until tender.

Add in a pound of ground beef. Cook until completely browned.

 Once the beef is browned, drain off any excess grease if necessary. Add in 2 tablespoons chili powder and a half teaspoon each of salt & pepper. DSC_0011_edited-1 Add in a cup of water.

2 cups of tomato juice

and 1 cup of uncooked traditional rice. DSC_0016_edited-1_thumb Crumble your bacon and toss it in. Bring this all to a simmer, cover and cook for about 20 minutes or until the rice is cooked. Stir it a couple times to monitor the liquid. If it begins to get too dry, add a little additional water or tomato juice. DSC_0017_edited-1   Once the rice is cooked, stir in a cup of rinsed, drained canned black beans or maybe a cup of frozen corn. Cook until it is heated through, just a couple more minutes.
