Why Food Security Matters (A Homeschool Conversation)
In this episode of Homeschool Conversations, I sit down with David Stelzer, founder of Azure Standard, to talk about one of the most important topics facing families today… food security. Https://www.AzureStandard.com David shares the story behind Azure Standard’s beginnings, how faith and family values shaped its mission, and why securing real, nutrient-dense food matters more than ever.
We talk about what food security means for homeschool families, how to build stronger local food networks, and practical ways to make sustainable, healthy choices without breaking the budget. If you care about where your food comes from, how it’s grown, and how to teach your kids the value of stewardship and self-reliance, this is a conversation you won’t want to miss.

David’s story begins on a family farm in Oregon, where his father recognized early on the connection between diet and health. When David struggled with poor health as a child, his dad made a radical decision for the time: he switched all 1,800 acres of their farm to organic methods — back in 1973! That commitment to growing food that truly nourishes both people and the soil eventually led David to start Azure Standard in 1987, with small, local drop-offs that grew into the nationwide network many families rely on today.
In this conversation, we explore what real food security means in our modern world — and why it’s such an important topic for homeschooling families to understand.
“We live in a nation that has way too many calories,” David explains, “but people aren’t getting the nutrition they need.”
He talks about how regenerative agriculture and healthy soil are at the heart of lasting food security — and how even the Bible points to the importance of plants as both food and medicine. When we lose that connection to the land, or when food becomes only about quantity instead of quality, both health and sustainability begin to suffer. I loved this part of the conversation because as we recover from the tornado we were hit with in April, we are heading in this direction. So expect more on this topic as I start doing more!
From the story of Azure’s beginnings to the principles of soil health and plant diversity (even which kinds won’t inter-pollinate — something fascinating for homeschool biology discussions!), this conversation is a thought-provoking reminder that our choices as consumers, gardeners, and educators all matter.
So grab a cup of tea and join me for an inspiring talk about how food, faith, and family learning all tie together in the question: Why does food security matter, what does food security have to do with farming and the quality of the food we eat — and is there anything we can do to improve our diets and food?
