Recipe of the Month- Salsa Bean Soup
This recipe is one of our family favorites. It is great timing for this one with the cooler weather approaching. It is a great alternative to chilli. Seriously, this is the easiest recipe to dump in the crockpot in the morning and let it cook on low all day. Great for a day that you have a lot to cover with the kids, or a field trip and you won’t be home all day. I am really finding that my crockpot is my best friend these days. It is a total lifesaver! It is almost embarrassing that this recipe only has 2 ingredients, but is packed full of flavor. It is also a great meal on a budget! The beans and salsa at Aldi would cost less than $5.00. Love it! Let me know what you think. For all of you who eat gluten free, this is completely gluten free!

- 6- 15oz. cans white northern beans
- 1- 40oz. jar of salsa (I use Pace)
- Shredded cheese (optional)
- sour cream (optional)
- Avocado (optional)
- Dump all ingredients into stovetop pan or crockpot
- Heat on warm until thoroughly heated
- Top with the toppings you like
