Slow Cooker Pork Tenderloin

Serves: 4 servings
  • 1½ pound of red or Yukon gold potatoes
  • 1½ lb pork tenderloin
  • ½ tsp ground coriander
  • ½ tsp crushed fennel seed
  • ½ tsp freshly ground black pepper
  • ½ tsp smoked salt (If you can’t find a good smoked salt in your area, use ¼ tsp chipotle chili powder and ½ teaspoon sea salt.)
  • 1 c chicken broth
  1. To begin, peel and cut the potatoes into 2 inch pieces. Layer those in the bottom of your slow cooker.
  2. Sprinkle your pork tenderloin with the seasonings.
  3. Pour the chicken broth in with the potatoes, then place your tenderloin over the top. Cover and cook on low for 5-6 hours.
  4. Enjoy!
